Fritters alla Veneziana


FRITOLE NEAR(LY) VENEZIA(NA)

Fritole or fritters made with gluten-free flour are actually better than regular ones. They're lighter, airier, and have a much better texture. And thats's a fact! Try this simple recipe using a yogurt container for measuring and see for yourself!

Here's what you need:
1 yogurt (150g)
2 yogurt cups gluten-free flour
1 yogurt cup milk
1 egg
1 vanilla sugar
1 tea spoon grated lemon zest
1.5 teaspoons baking powder
pinch of salt

Here's how to do it:
In a large bowl, mix dry ingredients together. In a separate bowl mix all wet ingredients until you get a smooth batter. Add the dry ingredients into the wet batter, mix them together and don't worry about over-mixing. There is no gluten.

Heat oil in a pan over medium heat. Once the oil is hot (not smokey hot!), use a spoon to scoop up some batter and gently drop it into the hot oil.

Fry the fritole until golden brown on both sides.Drain them on paper towels, dust them with powder sugar and serve fritole warm.
