Why this blog?


It’s food, stupid. 

I started a food blog on Blogger back in 2017, but it's been sitting idle for a while. Then I decide, to start all over again. The reason? Gluten. After years of struggling with gut issues, I finally discovered that I have IBS and gluten is a major trigger. Since eliminating gluten from my diet in February 2023, I've seen a tremendous improvement in my gut health.

I'm restarting my blog in English to reach a wider audience (laughing out loud inside), hopping to show that gluten-free and IBS-friendly recipes can be truly delicious and worth the effort. Some of my recipes won't be super detailed, some will be obvious gluten-free, but they'll be ideas to get you started. If this blog helps even one person find relief from bloating and discomfort, it will all be worth it!

Eliminating gluten also led to unexpected collateral damage. Without all that pasta, gnocchi, bread, cakes, pastries... the weight came off effortlessly! In just 7 months, I went from 103kg to 93kg. So, don/t substitute one carbohydrates with another. Gut them loose! You don't have to eliminate them all together, but reduce those body inflater m....rs. 

I don't know what type of diet this is. Keto, nano, inter-something.... but my gut feel is I'm on the right track. Because it's not a diet. These are dietary lifestyle changes.

IBS is a very individual condition, and what works for me might not work for you. For example, I can tolerate dairy and some vegetables like cabbage. It's important to identify your own triggers and adjust recipes accordingly. If you know a particular ingredient doesn't agree with you, skip it!

*I occasionally use a tiny amount of garlic to flavour olive oil in the pan, but that's a very rare occurrence.

Easy Risotto

FAUX RISOTTO This isn't a traditional risotto where broth is gradually added to the rice with constant stirring. Nope. We won't be doing the final mantecatura* step either. But that doesn't mean this faux risotto will be lumpy and dry. Not at all! It's creamy, flavourful, and perfect for a busy weeknight.
